Get your Unicorn Drink On!

You guys know I love unicorns…..right now as I am writing this blog I am staring at a mounted unicorn head. Don’t believe me? Here she is:

As much as I love my unicorn life, I equally love the daily superfood shake I drink. It helps to fill the gaps in my nutrition, eliminates some of the digestive issues I have suffered from in the past, and it allows me to bypass the multivitamin I had to choke down before. Beyond that, I love how creative I can be with recipes while still hooking myself up with a tasty treat that is the same as taking five BIG trips to a salad bar. Huzzah!

Recently I concocted a unicorn version of my beloved ride or die shake and loved it so much I had to share with you all! This recipe is great for summertime, especially since Farmer’s Markets are open and you can snag some amazing fruits!

Katie’s Unicorn Drink

Ingredients:

-1 scoop Vanilla Superfood Mix (I use vegan vanilla because I love the taste. You can grab it HERE in a combo box that also has chocolate!)
-1/3 cup pineapple
-1/3 cup strawberries
-1/3 cup blackberries
-12 to 14 oz water or coconut milk, divided into thirds
-Ice if desired

How to make:

-Blend 1/3 of your vanilla superfoods with one of the fruits and 1/3 of the liquid. I also blend in 2 ice cubes. Once that is blended, pour into glass. Repeat two more time with remaining fruits, superfoods, and liquid. As you pour each layer, a fun unicorn layered effect will happen.

-You can top with whipped cream and sprinkles if you really want to, or you can make your own using coconut cream! I prefer this option so it is still on point when it comes to my meal plan!

***Few things I want to share:

-I prefer water, but coconut milk is my runner up when it comes to liquid. You can use almond, soy, or whatever milk you like.

-I prefer milkshake consistency, so I tend to go heavier on the ice. You can omit if you like it differently.

-Someone will ask if they can use their protein powder. Totally up to you. I will say this: The superfoods mix I use is NOT a protein powder. It does have protein in it like what yours may have, but the OTHER ingredients in it that are all natural that make it different. Read your labels. You may be drinking something you think is good for you that isn’t loaded with emulsifiers, sugars, and crap. A $30 thing of protein powder is NOT the same, so I cannot guarantee that taste. If you do want to try mine, let me know so I can get you the best deal!

Rock the Reset: Day 14

ONE MORE WEEK!!!!!!!!

Can y’all hear the jubilation through my typing????!!!!!

Don’t get me wrong….I love how I am feeling internally, how I’m sleeping, and the food I am eating, but I definitely am looking forward to getting back into my normal routine.

Coffee….Energize….workouts….I can’t wait to be reunited. I honestly cannot believe I have not cheated with COFFEE once!!!!! I’m very impressed with myself.

This week is the Restore section of the detox, meaning legumes and grains are eliminated and my focus is on simple nutrition. I also add in a new supplement, Revitalize, which helps restore the healthy bacteria in my digestive tract.

So how did Week Two end up? Well, let me tell you…..

Earlier in the week I connected with two local bakers who own a start up vegan doughnut company in the area. I loved all of the info on the company, and they invited me to a doughnut tasting they were hosting today. Knowing this was something awesome and something my bloggers would absolutely love to know about, I attended the tasting with my friend Julie and new friend Erica. I’ll be blogging about the company very soon, so be on the lookout, but let’s just say…..this happened:

The bonus to trying the doughnut samples….I had extra calories, so I was able to get in a lovely 3 mile run. On this beautiful March day, I have to say….it was exactly what I needed to recharge my batteries and refocus me for this final Reset week. Tomorrow, back to yoga…but only for another week.

My final week!

This week I am finally giving tempeh a try. I’ve heard many great things about the recipe that came with the program, and since I’m trying lots of new things with this Reset I figured I would build it into this final week. Other than that I am incorporating my favorite recipe thus far, the zucchini cashew soup! It’s so easy and good!

Tomorrow I will weigh in to see how I’m doing, as well as take measurements. I’m not super focused on the numbers on the scale….I’m more focused on just getting through this week!

Shoutout to my Shakeology for pretty much saving my life. It’s nice to still have a serving of chocolate every day…makes me feel like I’m having a cheat when I’m not.

Rock the Reset: Day 3

Three days down!!!!

I’m proud of myself….no cheats so far! Although today was a close call….

I THOUGHT I was doing well today….then I realized that there were a ton of Girl Scout cookies in the house and that’s all I fixated on the rest of the day. I was standing on the cookie ledge for the better part of the afternoon, and it took several people talking me off it before I settled on my Shakeology which helped eliminate my cravings. Thank heavens for that….that’s why I always am drinking the chocolate flavor….it helps me with my sweet tooth.

Workout wise, I am surprised how sore my arms and legs are from the Yoga Retreat. I’m struggling getting the yoga breathing thing down, but I am seeing improvement since I started, so that’s a bonus. It’s weird not being covered in sweat when Im done….is that normal? I miss that from my usual workout….it’s like my badge of honor for rocking the heck out of my workout.

Here’s my meal plan for Day 3:

-Breakfast: 2 Eggs, 1 piece Whole Grain toast, 1 cup steamed spinach

I subbed in Brussels in place of the asparagus my plan originally called for. 

Today I added my Power Greens to my Shakeology, and that helped. I can’t handle them on my own but didn’t want to skip them. The Power Greens are similar to the Shakeology Boosts, and once blended I could handle them.

Overall I’m feeling really great internally. I feel like I am sleeping better, and I’m really focused on my water intake, which i something I have struggled with in the past. This journey is all about the small victories.

These damn Girl Scout cookies though…..they gots to go! They were my small victory today but I’m worried how I can avoid them for 18 more days!!!!

The Last Straw

I knew this blog post would have to happen. I just knew it!

Yesterday I shared with my followers over at The Sparkle Fitness Babe that I had found a three pack of stainless steel straws during my Starbucks stop and was beyond excited! I had been looking for some this week and was very happy to randomly find them while I was getting my caffeination on. Since stainless steel straws aren’t super popular yet, I knew I would have a bunch of people asking me why I wanted them and what the deal is with them.

This blog is for you, questioners of the straws.

As we know, I pay a lot of attention to my health and the quality of things I put in my body. Something that is just HUGE to me that I have been working hard to eliminate: chemicals. Something that is also pretty huge to me: lipstick. Yes, I love wearing it, and I don’t always want to mess up cups with my “Katie was here” lipstick marks, especially when I am drinking my frothy daily Shakeology….milkshake mustaches and bright pink lipstick shades can be messy! Because of that, I have always been a straw gal. Prior to this purchase I was using biodegradable  paper straws.

Reasons why I opt for stainless steel straws (say that five times fast):

-They are reusable so you are eliminating waste. I really try my best to do little things daily that can help impact the environment in a positive way. By eliminating the use of plastic straws I am eliminating the daily tossing of plastic, so they are better for the environment. They are also extremely durable and unbreakable, meaning they will live a long and happy life in my kitchen cupboard.

-They are cost effective. A three pack of stainless straws from Starbucks runs you $5.95. A twelve pack of plastic straws from Target costs about $3. Those, obviously, are for a one time use. I can use my stainless straws over and over and over and over, saving me money. When I was using the biodegradable straws, six straws would cost me $2.

-They are chemical free. Many plastics have traces of BPA and Phthalates, toxic chemicals that can harm your body. Stainless steel: none. They are BPA free and non toxic.

-I love how they look. There are other kinds of great reusable straws on the market, such as glass straws or bamboo straws, but I just love the look of stainless and prefer those over the others.

You may not be a straw person, and that’s ok, but if you are I recommend going a more eco friendly route and trying stainless!

Chocolate lovers only, please!

I have a big problem, and they come in the form of Reese’s Peanut Butter Cups.

I JUST FREAKIN LOVE THEM (Especially the Reese’s Peanut Butter Cup eggs…there’s just something amazing about them).

Ok, let’s be honest….I like all chocolate, but since these are my favorite, I am always trying to find a way to work them into my diet. Usually I stick with my trusty Reese’s Peanut Butter Cup Shakeology recipe, but sometimes I just. want. the. chocolate.

This weekend I decided I would not eat like a pig for the Superbowl, and instead made a fabulous Black Bean and Spinach Enchilada recipe and…. Drumroll…..Shakeology Reese’s Peanut Butter Cups. They are super easy and super delicious….and being that the entire batch was eaten by Kyle, I can attest that others love them, too.

Here is how you make my PB Heaven Cups….because they are so heavenly.

Ingredients You Need:

-5 Tablespoons Chocolate Shakeology (Don’t have any….you can order some here!)

-2 Tablespoons Unrefined Virgin Coconut Oil

-3 Tablespoons Natural Peanut Butter or PB2 Mixed with Water

-Muffin Pan and some liners if you so desire

I use Chocolate Vegan instead of regular.....use what you love!

Step 1: Line your muffin pan with your liners (if you are using them).

Step 2: Melt the coconut oil in the microwave until a smooth liquid.

Step 3: Mix the coconut oil with the Shakeology in the bowl. If you don’t like the taste of coconut oil, you can use water in its place (same amount, your call).

Mix until smooth.

Step 4: Add barely enough of the chocolate mixture to cover the bottom of the liner. Put in the freezer for about 2 minutes, then remove.

Step 5: Add your peanut butter. I used natural because I didn’t have PB2 on hand (that’s the powdered stuff), but I also mixed the peanut butter with a little bit of water to make it creamier. You don’t have to do this, but I liked how it worked.

Step 6: Top with remaining chocolate mixture.

Step 7: Place into freezer for about 25 minutes and then get your eat on!
