Treat Yoself.

If there is one topic I could argue about until I go blue in the face, it is how important a life of balance is. Surprisingly, this is a topic that I get a lot of crap for….and I know I’m not the only one.

Let’s play Captain Obvious for a second…….

-Yes, I am in the health/wellness industry. Not only am I a consultant, but I’m also a fitness instructor and entrepreneur providing support to hundreds and hundreds of individuals.

-Yes, I have had a massive health transformation of my own. I’ve lost (and kept off) over 60 pounds by incorporating at home workouts, eating a healthier diet, and eliminating alcohol.

So that should mean I only drink water and eat kale, right?

No. Noooooo. Noooooooooooooooooooooooooooo!

The one thing that gets really frustrating in this industry is that some people look at you like you have three eyes if you eat ANYTHING other than kale on kale on kale with a side of kale. Let’s be real people! That’s not happening!

I truly believe that it isn’t healthy to eliminate food groups…and if you do some research you’ll see that most people end up gaining back the weight they lost temporarily once they reintroduce whatever food it was they eliminated. There are better ways to lose weight and get healthy, friends, but we can chat more about that at a later date.

Back to the balance thing….

Since the beginning of my journey I have made it clear that I will never be someone who eats healthy 100% of the time….I love doughnuts and pizza and tacos too much! Instead I focus on the 80/20 rule…..I eat healthy 80% of the time and indulge the other 20%.  I bust my ass hard enough that I don’t feel bad about myself when I do eat those things, and I focus on portions. Regardless of what I am doing I always focus on the portion amount; it’s a great way to still eat those foods without feeling awful after. Thank you, Fix, for teaching me about the importance of this. Some foods I have perfected healthier alternatives to, like my beloved Nice Cream, but some things are best in their original form. Chocolate Pretzel doughnut, I’m talking to you.

Awhile back I got a little heated on social media when everyone was all hopped up on the Unicorn Frapp from Starbucks. Did I go get one? You bet your sweet ass I did. ANYTHING that has Unicorn  in the title is something that is a must for me….I am obsessed with Unicorns! I was all about trying it to see the hype, and I was prepared for some comments about a health coach choosing to try it, but what I wasn’t prepared for was the insane amount of unicorn haters!

I’ll be honest….I actually liked seeing this pretty little drink pop up in my newsfeed all day when it was launched. What a breath of fresh air! Instead of seeing so many of you posting gruesome images related to crimes or animal abuse or racially charged statuses or political garbage….I was seeing something that people were associating with happiness. That’s a win in my book.

At 59g of sugar for a Grande, I can tell you it obviously isn’t the healthiest choice. I was prepared for some shade thrown at me since I’m a health coach indulging in a sugary drink; what I wasn’t prepared for was the fat shaming and straight up rudeness I saw people demonstrating……OVER A FRAPPUCINO!!!!!!!!!

Guess who was at the center of all the ridicule? Fellow fitness lovers. No, I’m not just talking about my fellow coaches, though some of them got hit pretty hard, but friends of mine in the running community, friends who are vegetarian, friends who own yoga studios, etc. It was like all of these people who spend time working out and taking care of their bodies were not allowed to try this Starbucks specialty drink.

Here’s where I get super irritated with that kind of behavior: the people who were doing the dissing and posting ignorant comments are the same people who go through fast food restaurants every.single.day…..people who go out and drink in excess every single weekend….people who eat 3x the recommended serving amount….and the people drinking soda after soda after soda. You want to talk to me about sugar? C’mon, hypocrites.


Friends, if you want to drink a silly colorful drink, drink it. Don’t do it every day all day, but every once in awhile, treat yoself.

There’s a new fad drink in town, and I am hoping people don’t treat those who indulge in it the same as #unicorngate….and you better believe I gave it a whirl as soon as i saw it was advertised.

I am a huge cereal fan…..I rarely eat it anymore because it is one of those things where I cannot exercise portion control. To me, a whole box is a serving size (I know I’m not alone with that). Lucky Charms is up there as one of my favorites right behind Apple Jacks and Fruity Pebbles, so when Burger King launched their Lucky Charms shake, I decided to take one for the team and try it out.

When it came to the Unicorn Frapp, I wasn’t into it……I’m just not a huge berry fan and I didn’t like the sour sprinkles. When it came to the Lucky Charms shake, I was super disappointed. I wanted to like it so much….especially since I have had a sore throat for a few days. Katie logic: milkshakes help sore throats.

Thinking about trying it? Here’s what you can expect:

Lots of milk full of soggy Lucky charms bits (and I’m not talking about the tasty marshmallows), some weird marshmallow syrup on top, and a guaranteed stomach ache. I was prepared for it not to look like the pictures, but I wasn’t prepared for how nasty I would feel after I was done. It was GROSS.

I’ve always been upfront with my desire to live a balanced life and my love of food, and that’s not going to change anytime soon.  It’s OKAY to be in the health and fitness industry and like things that aren’t the healthiest. It’s OKAY to talk about them.

And it’s OKAY to try a drink when it comes out to see if it lives up to the hype.

Move over Buffalo Wings…there’s a new kid in town!

I am forever trying to find healthier alternatives to favorites in the food department. Buffalo chicken anything is one of my top picks, so imagine my delight when awhile back I stumbled across a recipe for Buffalo Cauliflower Bites!

Hmm….a veggie that had my beloved buffalo sauce (see ya Wing cravings) AND could be worked into my meal plan without guilt? Yes, please!

I shared that I made this recipe on my Facebook page the other day and was immediately flooded with messages asking for the recipe.

Here ya go folks….it is so super easy!

Want them more wingy? I have an alternate recipe that involves panko crumbs that I can share, too!

                                                  EASY BUFFALO CAULIFLOWER BITES

You will need:
-6 cups of cauliflower florets
-3/4 cup Frank’s Buffalo Sauce
-1 tablespoon butter, melted
-2 tsp garlic powder

****You can use Frank’s Hot Sauce in place of the Buffalo if you prefer!

How to make:

Mix all ingredients minus the cauliflower in a bowl. After cutting up cauliflower, place in a large gallon sized Ziploc bag. Pour buffalo mixture into bag and shake until cauliflower is completely covered.

Spread on a baking sheet. Bake at 450 degrees for 20 minutes. Serve with light ranch or bleu cheese dressing. You can serve hot or cold!

Here’s a look at the rest of my meal plan for the week! A new challenge group begins tomorrow, and I can’t wait to get back into a groove with my challengers! The cauliflower bites are an evening snack for me.

Operation: Don’t Eat the Feelings!

Do you ever feel like you absolutely KILLED the week?

That was me this week.

I officially started Core de Force Monday as a participant with a coach launch group as well as started a focused launch group of my own. These two groups were EXACTLY what I needed. Not only did I stick to my workouts, but I was laser focused on my meal plan, too. I’ll tell you what…when you have people who can see if you logged your workout or not….who encourage you when you don’t quite feel like pushing play….great things can happen. I’m so excited to take my progress pics tomorrow and measurements! Besides that, this program is proving to be a great fit for the stress and weird feelings I associate with this time of year. Let’s just call it DVD therapy!

Last week I totally failed and forgot to post my meal plan….sorry guys!

Here’s what on tap for this week.

This week I am fully exercising my right to the crock pot. Do you realize how many incredible recipes you can make in one pot with minimal effort???? Last year I ran a group focused on sharing healthy crockpot recipes that was a big hit….I’ve been toying around with the idea to run another one. The pumpkin overnight oats I am making this week came from that group originally, and I’m also making 21 Day Fix Pork Carnitas for dinner. They are so good!

Aldi’s has had some great deals on Jalapeños, so I am using them in my egg muffins as well as the Jalapeño Cheddar Burgers that came from the Core de Force recipe book. These are very flavorful, and if you are making meals for people who aren’t as focused on eating healthy as you are, serve them with a bun instead of plain.

This week is going to be a little hectic for me…I will be out of town Tuesday-Wednesday, which will result be eating out for a few meals. Since I will be back home by my favorite local spot, All Good Things (be on the lookout for a blog on them coming soon), I will be grabbing dinner there Tuesday…their Quinoa Salad is one of my favorite things! I’m also trying out a new place Wednesday for lunch that is a vegetarian restaurant….I haven’t ben able to access their menu online, but I’ll make sure to share how it is! I get a lot of questions as to why I add an extra snack on Wednesdays…I always have an apple before I teach Cize Live….it’s just my little energy boost!

Besides being on the go this week is also going to be a tough one for me emotionally. Tomorrow would have been my Grandmother’s birthday, and since it has only been two months since we lost her, I know I am going to be a little sad. Besides that, Sunday is the one year anniversary of losing my dad. I’m worried I will deviate from the meal plan this week and eat my feelings, but I am going to do my best to stay on track. I know the groups I am in will help me, too. However, if you see me and I am going for a brownie…or cookie…or pizza….you have my permission to smack me.

Let’s do out best to make it a great week, ok? I know we can do it.

Healthier Coffee for all!

I love coffee.

I love coffee a lot.

In fact, I’m pretty sure it’s my blood type.

Over the years my coffee style has evolved. Back in the day I actually hated it….yes, you heard right. I hated it. If I needed a boost I opted for pop instead of coffee. The taste of coffee was just….ugh! I’m not sure when I actually decided I liked coffee, but I can’t believe I used to choose that carbonated nastiness over my now favorite beverage!

In the beginning I would load my coffee up with flavored creamer and sugar to disguise the taste, then slowly started to cut back on all of those “add ins” I put into my cup. When I became a health and fitness coach, I started to pay more attention to how I was fueling my body. The creamers I loved….I was sad to find out how bad they were for me, but I knew that I couldn’t drink my coffee black. What in the world could I substitute for the fabulosity I had been using?

Here are some healthier alternatives to keep your coffee flavored and tasting great without loading it with unnecessary calories:

Coconut Oil and Extract: Coconut Oil has about a million uses, so I was excited when I added it to my coffee! Besides smelling like a beach,  coconut oil is great for boosting your immune system, increasing energy, and speeding up your metabolism! All you do is add one teaspoon of coconut oil, a splash of extract if you prefer (I love hazelnut), and blend in a blender or with an immersion blender. It makes it nice and frothy with a kick of extra flavor!

Coconut Oil and Unsalted Grassfed Butter: Also known as Bulletproof Coffee, I wasn’t sure how I felt about putting butter on anything besides toast, especially because I had read many articles sharing reasons NOT to drink bulletproof coffee.  However, I had read articles that shared how having your healthy fat early in the morning helped with focus and mental clarity, so I figured I would see for myself what the fuss was about. Blending the ingredients in with your coffee created a delicious latte , but I wasn’t a fan of cutting out other areas of my breakfast due to the nutritional content of the butter. Some people love this and drink it daily; my only recommendation is to do your research to see if it aligns with your current meal plan/diet.

Almond Milk/ Coconut Milk Creamer: I always have these on hand for my shakes so from a cost effective standpoint, I don’t need to purchase anything additional to flavor my coffee. Using a splash in your coffee with a bit of Stevia is a great way to add a little sweetness without the calorie overload (Sidenote: Stevia is all natural and a better alternative to sugar, but don’t use much…it is much sweeter than sugar).

Cinnamon: Replace your creamer with a teaspoon of cinnamon. This is my new favorite recipe, and it has a bunch of health benefits! Not only does it save you over 75 calories a cup, but adding cinnamon can help reduce cholesterol and blood sugar. Pay attention next time you are at Starbucks….you’ll see a cinnamon shaker at the coffee stand!

Make your own creamer: I used to follow the recipes for homemade creamer from Deliciously Organic, only I would use almond milk in place of the heavy cream. Making your own allows you to control everything that is in your creamer and the recipes make a ton!

Remember, everything is okay in moderation. Sometimes I indulge in regular coffee creamer (I love the Nestle Coffeemate Samoa flavor), but I don’t go overboard. Make smart choices…you don’t want to drink all of your calories!

All this coffee talk has me needing to brew another cup……or hit the coffee shop!

Chocolate lovers only, please!

I have a big problem, and they come in the form of Reese’s Peanut Butter Cups.

I JUST FREAKIN LOVE THEM (Especially the Reese’s Peanut Butter Cup eggs…there’s just something amazing about them).

Ok, let’s be honest….I like all chocolate, but since these are my favorite, I am always trying to find a way to work them into my diet. Usually I stick with my trusty Reese’s Peanut Butter Cup Shakeology recipe, but sometimes I just. want. the. chocolate.

This weekend I decided I would not eat like a pig for the Superbowl, and instead made a fabulous Black Bean and Spinach Enchilada recipe and…. Drumroll…..Shakeology Reese’s Peanut Butter Cups. They are super easy and super delicious….and being that the entire batch was eaten by Kyle, I can attest that others love them, too.

Here is how you make my PB Heaven Cups….because they are so heavenly.

Ingredients You Need:

-5 Tablespoons Chocolate Shakeology (Don’t have any….you can order some here!)

-2 Tablespoons Unrefined Virgin Coconut Oil

-3 Tablespoons Natural Peanut Butter or PB2 Mixed with Water

-Muffin Pan and some liners if you so desire

I use Chocolate Vegan instead of regular.....use what you love!

Step 1: Line your muffin pan with your liners (if you are using them).

Step 2: Melt the coconut oil in the microwave until a smooth liquid.

Step 3: Mix the coconut oil with the Shakeology in the bowl. If you don’t like the taste of coconut oil, you can use water in its place (same amount, your call).

Mix until smooth.

Step 4: Add barely enough of the chocolate mixture to cover the bottom of the liner. Put in the freezer for about 2 minutes, then remove.

Step 5: Add your peanut butter. I used natural because I didn’t have PB2 on hand (that’s the powdered stuff), but I also mixed the peanut butter with a little bit of water to make it creamier. You don’t have to do this, but I liked how it worked.

Step 6: Top with remaining chocolate mixture.

Step 7: Place into freezer for about 25 minutes and then get your eat on!
