Get your Unicorn Drink On!

You guys know I love unicorns…..right now as I am writing this blog I am staring at a mounted unicorn head. Don’t believe me? Here she is:

As much as I love my unicorn life, I equally love the daily superfood shake I drink. It helps to fill the gaps in my nutrition, eliminates some of the digestive issues I have suffered from in the past, and it allows me to bypass the multivitamin I had to choke down before. Beyond that, I love how creative I can be with recipes while still hooking myself up with a tasty treat that is the same as taking five BIG trips to a salad bar. Huzzah!

Recently I concocted a unicorn version of my beloved ride or die shake and loved it so much I had to share with you all! This recipe is great for summertime, especially since Farmer’s Markets are open and you can snag some amazing fruits!

Katie’s Unicorn Drink

Ingredients:

-1 scoop Vanilla Superfood Mix (I use vegan vanilla because I love the taste. You can grab it HERE in a combo box that also has chocolate!)
-1/3 cup pineapple
-1/3 cup strawberries
-1/3 cup blackberries
-12 to 14 oz water or coconut milk, divided into thirds
-Ice if desired

How to make:

-Blend 1/3 of your vanilla superfoods with one of the fruits and 1/3 of the liquid. I also blend in 2 ice cubes. Once that is blended, pour into glass. Repeat two more time with remaining fruits, superfoods, and liquid. As you pour each layer, a fun unicorn layered effect will happen.

-You can top with whipped cream and sprinkles if you really want to, or you can make your own using coconut cream! I prefer this option so it is still on point when it comes to my meal plan!

***Few things I want to share:

-I prefer water, but coconut milk is my runner up when it comes to liquid. You can use almond, soy, or whatever milk you like.

-I prefer milkshake consistency, so I tend to go heavier on the ice. You can omit if you like it differently.

-Someone will ask if they can use their protein powder. Totally up to you. I will say this: The superfoods mix I use is NOT a protein powder. It does have protein in it like what yours may have, but the OTHER ingredients in it that are all natural that make it different. Read your labels. You may be drinking something you think is good for you that isn’t loaded with emulsifiers, sugars, and crap. A $30 thing of protein powder is NOT the same, so I cannot guarantee that taste. If you do want to try mine, let me know so I can get you the best deal!

Sushi for Dessert? Yes, please!

A few weeks ago I ran across an article for an easy dessert sushi recipe that I absolutely had to try. It took all of a minute to make, and was delicious! Try it….especially if you have kids!

Here’s how I made my version of dessert sushi, but you could honestly customize it however you (or your kids) like!

Katie’s Dessert Sushi
Ingredients:

-Banana
-Peanut Butter
-Strawberries
-Graham Cracker
-Dark Chocolate Chips

Roll peeled banana in graham crackers, then slice lengthwise. You can also roll banana in coconut or rice krispies depending on what you like. Drizzle with melted peanut butter, then top with chopped up strawberries and dark chocolate chips. I use the brand Good Life for chocolate chips, which are great if you are looking for a dairy free, nut free, and soy free option, and I also used Smoreables in place of graham crackers!

Serve with chopsticks for a fun dessert experience!

The finished product! I didn’t roll the banana completely in graham crackers, but you can.

Rock the Reset: Days 8-9

Happy Week Two of the Ultimate Reset, friends!

Week Two is what resetters refer to as “Release”. During this week, we add in a Detox supplement, which surprisingly I liked! It has a lemony flavor and is best when mixed with super cold water and stirred consistently. This supplement isn’t one that makes you go to the bathroom a lot, so don’t worry about that if you are considering the Reset.

Yesterday I weighed in with the start of the week and was down two pounds and two inches. Like I said before, I’m not really as concerned with a huge weight loss; my goal was to feel better internally and have a better relationship with food. Even with my few little slip ups, I felt good about my progress and how I was feeling overall.

Here’s a look at what I have been eating this week in addition to my supplements (detox, optimize, power greens, and soothe):

BREAKFAST: A big ass plate of fruit…..which I have thoroughly been enjoying. I’ve always struggled with getting my fruit in during the day, so this has helped me realize that eating it first thing in the morning helps me get those portions in while feeling full and having all day to burn them off.

Rainbows are good…very good. 

LUNCH: Microgreen Salads or Quinoa Salads

Microgreen Salads were on my meal plan last week, and I loved them so much I chose them for this week as well. If you love something, why change? I love having a simple salad packed full of veggies for my lunch, and the creamy garlic dressing recipe is AH-MAZ-ING. I don’t even use dressing in real life, but during this reset I’m into it.

SNACK: Shakeology

This has been my saving grace….as a self diagnosed choc-o-holic, this is my sweet treat every day…..it’s also something I haven’t missed a day of in years, and I would never do anything that would force me not to have it.

DINNER: Stir fried veggies and a sweet potato

I fell in love with a slightly similar recipe during my 3 Day Refresh days, so this was a no brainer for me. I also love having sweet potatoes.

Today I went out to dinner with two of my friends before we went to see Beauty and the Beast. I was so happy when they agreed to go to The Mustard Seed, a local vegan/gluten free market and cafe. Here’s what I had for dinner:

Quinoa Stir Fry Bowl

I knew I could find something that was similar to the Reset recipes, and I was right! I had looked on the menu before I left my house to make sure…that’s what I always do when I am following a meal plan. It helps me stay on track!

Yoga….it’s going…..One day at a time. I see so many benefits of this program and why people like it, but I still am looking forward to jumping into the 21 Day Fix again once this ends.

Everyone says this week is emotional….I’m wondering if it will be for me. We shall see!

What the hell is that?

Over the weekend I heard that question so many times…and it was all because of this picture:

It’s like a baby….but a fruit. 

Most people had never even heard of this fruit, let alone seen a picture of it, so when I shared on The Sparkle Fitness Babe that I had gotten this item, I was bombarded with comments, messages, texts, and questions.

This, my friends, is a jackfruit.

Awhile back I wrote about one of my favorite local places, All Good Things, a place where my mom and I had fallen in love with their jackfruit tacos and jackfruit pizza. After trying it for the first time, I decided I wanted to get my one of my own and try to make some recipes with it for my meal plan.

So what the hell is a jackfruit anyway? It’s a fruit that is a relative of the fig and breadfruit and believed to have originated in Asia….and, as my picture shows, it is a fruit rather large in size.

The fruit itself can be used in a variety of ways. When brownish green, like the one I am holding, it can be used as a meat substitute, similar to pulled pork. As the fruit ripens and begins a brighter green, it is much sweeter (you can eat it at any state) but you won’t want to necessarily use it as a meat when it is this sweet.

Its taste? It is kind of hard to describe….but the best I can do is a blend between a mango, banana, and pineapple. There are SO many recipes for jackfruit (don’t believe me, look at Pinterest!).

I wanted to show you all how to clean this huge fruit as well as what the inside looks like. It’s an interesting fruit, as it is made up of arils, tiny fleshy chunks that contain a seed in each one. The seeds can be boiled and taste like potatoes!

Don’t be scared of this weird looking fruit…it is so delicious and versatile…and if you are trying to go meat-less, this is a great alternative!
