Crack isn’t always whack….

At least when it is crack chicken we are talking about!

I made this super easy chicken recipe for dinner the other night and had to share. It’s one of those recipes that everyone always wants seconds of, begs for the recipe, and requests over and over. Best part? I made mine in my Instant Pot, but you could use a crock pot if that’s easier!


Katie’s Crackpot Chicken


-2 pounds boneless chicken breast
-8 pieces of bacon (cooked and crumbled)
-1 packet of Ranch seasoning
-8 oz cream cheese
-1 cup water
-4 oz shredded cheddar cheese
-3 tablespoons corn starch
-chopped green onions

Place cream cheese and chicken in your Instant Pot, sprinkling the ranch seasoning packet over the top. Add one cup water then cook on high pressure for 25 minutes (do a quick release once complete). Remove the chicken and shred (I use my Kitchen Aid mixer with the paddle attachment), then return to Instant Pot, adding in cornstarch. After water has been absorbed, mix in cheddar cheese, bacon, and green onions. Serve on a bun, in a wrap, over rice, or on its own.
